Spiced Apple Bee's Knees

Honey Syrup

120ml water

120g honey

2 sprigs of rosemary


50ml Darnley’s Gin

25ml lemon juice

45ml apple juice

15ml honey syrup

Fresh or dehydrated apple slices for garnish

Honey Syrup Instructions

Place the water, honey, and rosemary in a small saucepan and bring to a boil. Turn off the heat and let it sit for 10 minutes. Cool the mixture to room temperature before using, and then store any remaining syrup in the refrigerator for up to one week.

Cocktail Instructions

Add all the ingredients to a cocktail shaker, then add ice and shake to combine. Strain the mixture into a coupe glass. Garnish with apple slices.
