This fragrant twist on a bees knees cocktail is perfect not only for celebrating with the mother figure in your life, but for welcoming the first signs of spring too!⁠

You will need:⁠
⁠
🍸️ For the cocktail:⁠
⁠
175ml lemon juice⁠
50ml Darnley's original gin⁠
⁠
🌸 For the chamomile syrup:⁠
⁠
6 tsp honey⁠
115g sugar⁠
175ml water⁠
8 bags chamomile tea⁠
⁠Flowers for garnish⁠
⁠
How to make the chamomile syrup:

  1. Combine Sugar, honey and water in a small saucepan and set over medium heat.
  2. Bring to a simmer and cook until the sugar has dissolved.
  3. Remove from heat and add the chamomile tea bags; steep for about 10 minutes, then discard tea bags. Let the syrup cool and then transfer to an airtight container and chill until ready to use.⁠

How to make the cocktail:

  1. Combine the gin, lemon juice and chamomile syrup in a cocktail shaker over ice.
  2. Shake and strain into your favourite cocktail glass.
