Hot Spiced Gin Punch

 

Ingredients

200ml Darnley's Spiced Gin (Purchase 20cl here)
400ml Apple Juice
500ml Ginger Beer
50g demerara sugar
1 cinnamon quill or a sprinkling of cinnamon ground
80ml lime juice

Method

Pour all the ingredients apart from the gin into a pan and simmer for 5 minutes.

Take off the heat and add the gin

Strain and serve in latte glasses with apple slices on a cocktail stick to garnish.

Lemon & Darnley’s

Ingredients

50ml Darnley’s Original Gin

12ml Lemon Juice

12ml Elderflower Cordial

Dash Gomme Syrup

Bitter Lemon

Method

Place all ingredients (except bitter lemon) into a shaker and fill with ice. Shake vigorously. Single strain into a sling glass over cubed ice and top with bitter lemon.

 

In the Garden

Ingredients

250ml Darnley’s Original Gin

100ml elderflower cordial

1L cloudy apple juice

Apple  slices and ice, to serve

(serves 8)

Method

In a pitcher, mix the gin with cordial, apple juice, apple slices and ice. When ready to serve, divide the mixture between 8 glasses.

Grapefruit Sparkler

Ingredients

25ml Darnley’s Original Gin

10ml St. Germain

Prosecco

¼ grapefruit juiced

 

Method

Shake all the ingredients, apart from Prosecco, with ice and pour into a champagne flute. Top with prosecco and garnish with grapefruit peel and a sprig of thyme 

Darnley’s Delight

Ingredients

50ml Darnley’s Original Gin

25ml Pineapple Juice

10ml Noilly Prat Vermouth

Juice of ½ lemon

dash Gomme syrup

Angostura Bitters

dash pasteurised egg white

Method

Pour all ingredients into a shaker over ice and shake rapidly. Double strain into a sherry goblet. 3 drops Angostura Bitters as garnish.

Red Snapper

Ingredients

50ml Darnley’s Spiced Gin

75ml tomato juice

10ml fresh orange juice

Juice half lime

3 dashes Tabasco (to taste)

2 teaspoons Worcestershire Sauce

2 grinds cracked black pepper

2 teaspoons fino sherry

celery salt

Method

Run a lime wedge around the rim of the glass and then dip the wet rim into the celery salt. Fill the glass with cubed ice then pour in Darnley’s Spiced Gin, tomato, lime and orange juices and the Tabasco and Worcestershire sauces. Float sherry on top and grind black pepper over top too. Garnish with a celery stick.

Spiced Pear Collins

Ingredients

50ml Darnley’s Spiced Gin

25ml pear puree

10ml rosemary- and clove-infused simple syrup

20ml lemon juice

Dry sparkling wine or soda water, to top

1 spring rosemary, to garnish

For the Pear Puree

2 pears, such Bosch or Bartlett, peeled and pitted

25ml lemon juice

1½ tsp. fresh rosemary

 

For the Rosemary and Clove Simple Syrup

½ cup sugar

½ cup water

1 tbsp whole cloves

3 sprigs rosemary

Ingredients

50ml Darnley’s Navy Strength Gin

25ml lemon juice

25ml thyme simple syrup (or plain simple syrup)

Thyme Simple Syrup

1/2 Cup Water

1/2 Cup sugar

handful thyme sprigs

Method

To make simple syrup, bring sugar, water and thyme to a low simmer in a small pot over medium heat. Stir until sugar is dissolved. Let sit 30 minutes or overnight for a more intense flavour. Strain. Cool. In a cocktail shaker add ice, gin, lemon juice and simple syrup. Shake well. Pour into a small chilled glass and garnish with a sprig of thyme. Serve immediately.

Admiral of the Fleet

Ingredients

100ml Rooibos Tea

50ml Darnley’s Navy Strength Gin

20ml honey simple syrup

1tbsp lemon juice

Cinnamon stick

For Syrup

1 part heather honey

1 part water

Method

Brew 100ml of Rooibos tea, store in the fridge to keep cool. Make a batch of honey simple syrup, bring to a simmer until the honey has dissolved then cool in the fridge. Add all of the above ingredients into a cocktail shaker and ice.Shake several times and strain into the cocktail glass. Garnish with a cinnamon stick and serve with a ginger biscuit.

The Neuk

Ingredients

50ml Darnley’s Navy Strength Gin

5ml Wemyss Malts Peat Chimney Whisky or similiar

5ml Noilly Dry Vermouth

Method

Pour all ingredients into a mixing glass, add ice and stir well till mixing glass is frosted. Double strain into a martini glass.

 

Pink Gin

Ingredients

50ml Darnley’s Navy Strength Gin

Angostura Bitters

Lemon

Method

Chill the glass, then coat the inside with the Bitters. Add the gin very well chilled, garnish and serve.
